Vegan Chocolate Chip Pecan Banana Bread

Some things just warm my belly and my heart all at once, like the perfect crumb of freshly baked banana bread. And when that bread is dotted with warm melted chocolate and the gentle crisp of sweet pecans, I’m over the moon. A quick bread is too easy to make myself and to have the freedom and control of ingredients like vegan butter and beneficial flaxseed and or chia seeds gives me an added sense of well-being because I’m eating good food and it’s good for me.

Ingredients
Sugar1 ¼ cup
Vegan Butter ½ cup softened (but not melted)
Flax Seed (ground) 1 Tbsp
Chia Seed (ground )1 Tbsp
Water 6 Tbsp
Plant-based Yogurt ½ cup
Bananas 3 (over-ripe, smashed)
Vanilla Extract 1 tsp
All-purpose Flour 2 ½ cups
Baking Soda 1 tsp
Kosher Salt 1 tsp
Chocolate Chips 1 cup
Pecan (halves & pieces) 1 cup
Preparation
Prepare 2 loaf pans by spraying with non-stick spray. Preheat oven to 350 degrees.
How To Make
Mix butter and sugar together (may be best to smash together with a fork to combine) until resembles coarse meal (set aside).
Mix flax seed and chia seed in a small bowl with water and set aside; mixture will eventually turn goopy (like an egg).
In a separate bowl, combine flour, baking soda, and salt until well incorporated.
Combine butter/sugar mixture and flax/chia seed mixture, along with yogurt, bananas, and vanilla. Add flour mixture to the wet ingredients and stir with a wooden spoon or rubber spatula (do not over mix). Add chocolate chips (and any other mix-ins you desire), folding in with spoon or spatula. Divide batter between the 2 loaf pans.
Bake for 50-55 minutes, until toothpick inserted comes out mostly clean. Let cool in pan for about 15 minutes and then turn out ontowire rack for an additional 30-60 minutes.
