Easy Meatloaf

This meatloaf always brings me back to a visit with my sister (Marsha Jo Coles-Hairston) after we returned from Yokota, Japan. She made it for me then, and it’s been a comforting family favorite ever since.

Yield: 8 servings
Prep Time: 10 minutes
Cook Time: 1 hour

Ingredients

  • 2 lbs ground beef

  • 2 eggs

  • 1 envelope Chef’s Cupboard Onion Soup Mix

  • 3/4 cup water

  • 3/4 cup plain dry bread crumbs

  • 1/3 cup ketchup

How To Make

  1. Preheat oven to 350°F.

  2. In a large bowl, combine all ingredients.

  3. Shape mixture into a loaf.

  4. Place in a 13 x 9-inch baking or roasting pan.

  5. Bake for 1 hour, or until fully cooked through.

  6. Let rest for 10 minutes before slicing and serving.
